  • How we roast

    At Hillside Coffee, we start with sustainably sourced, specialty-grade green beans from trusted farms and cooperatives in Uganda, Colombia, and Brazil. We roast everything in small batches using our Aillio Bullet roaster — a precision tool that helps us bring out the best in each origin. By roasting up to just 1kg at a time, we focus on quality, consistency, and flavour. Every bag is freshly roasted, packed, and posted within days — so you get the best coffee possible, every time.

    Hillside Coffee is led by Donnchadha — a coffee enthusiast based in Limerick with a deep love for the ritual, culture, and community that coffee brings. For me, coffee isn’t just a drink — it’s a way of connecting people. Whether it’s a quick morning brew or a long conversation in a café, good coffee has the power to bring people together.
